Low Carb Protein Pancakes

These are low carb and high in protein. Load them up with all your fave toppings. I added sunflower seed butter, fresh fruit and stevia syrup👌🏻.
Ingredients
1/2 C cottage cheese( 2% milk fat)
1/2 scoop protein powder. I used a dairy free one( active stacks).
1 egg
2 egg whites
2 tsp baking powder
1 tsp vanilla
1/2 tsp cinnamon
Directions
Add all ingredients to a blender and mix well.
Let batter sit for a few minutes.
Use a griddle or pan with low to medium heat.
Spray generously with cooking spray. Pancakes are ready to flip with they form several bubbles. Pancakes will be thinner than your typical pancake.
Stack pancakes and top with your faves!!!
Makes 8 thin pancakes.
Have 1/2 a serving of this if it is too much. Or make a double batch for leftovers.
