Broccoli Salad

Ingredients

  • 6 cups broccoli (raw), chopped

  • 1/2 cup purple onion, chopped

  • 1/3 cup sunflower seeds (raw)

  • 1/3 cup dried cranberries (no sugar)

  • 5 slices turkey bacon, cooked

  • 1 cup coconut yogurt

  • 2 TBSP red wine vinegar

  • 2 TBSP maple syrup (pure)

  • 1 tsp salt

  • 1/4 tsp pepper

Directions

  1. Chop broccoli and onion.

  2. Chop cooked turkey bacon

  3. Add broccoli, onion, sunflower seeds, cranberries, and bacon to a bowl.

  4. In a separate bowl, mix yogurt, vinegar, salt, pepper, and maple syrup together and add to broccoli mixture. Mix well

Recipe makes 8 cups. 1 serving = 1 cup
